For the week after New Years I have been trying to eat simply and healthily to give my body a chance to recover from all the lovely butter and champagne I consumed over the holidays.
Today I discovered the beauty of mashed cauliflower, which is like mashed potatoes but less carbs and more nutrients. It’s flippin awesome!
Microwave frozen cauliflower florets (or boil if fresh) till tender.
Add some salt n pepper and olive oil to the cauliflower and blend (I used the magic bullet!) until the consistency of mashed potatoes.
You can also add cream for flavor if you’re not avoiding dairy.
I added some feta cheese and garlic for zing factor.
It’s a beautiful thing when “comfort food” meets “good for you”.
